Sweet Potatoes with Chilies Lime and Cilantro

I had one bite of this and immediately knew I had to add it to this site. It is amazing and delicious and makes for a good winter night's meal. It has a tangy taste that hits you right away. Honestly I don't know how you could go wrong with this meal, and for potato lovers, there's no doubt that you'll be dieing to try this after you read the amazing thing that is this recipe. And I mean, who doesn't love potatoes?
Bake Time: About 70 min (1 hour and 10 min)
Ingredients: 2 1/2 pounds of large sweet potatoes, 1 finely chopped jalapeno( seeds included ), 1 large thinly sliced shallot or 1/4 red onion , 2 to 3 tablespoons of fresh lime juice( I used lemon juice ) from about 3 limes, 2 tablespoons olive oil or melted coconut oil, 1/4 roughly chopped mint( if you have it ), 1/4 cup of roughly chopped cilantro, 1/4 cup chopped, roasted peanuts( optional )
Tools: foil-lined or a parchment-lined baking sheet

Making it:
- Preheat the oven to 400ºF.
- Prick the sweet potatoes with a fork and bake on a foil-lined or parchment-lined baking sheet for about an hour, until the skins are wrinkled and the flesh is completely tender.
- Meanwhile, combine the jalapeno and shallot in a large bowl with a pinch of salt and the lime juice. Allow to sit for at least 10 minutes or up to a few hours. Remove potatoes from oven and let cool briefly, then peel and place in a bowl.
- Pour the macerated shallots and jalapeno over the sweet potatoes. Add the oil, herbs and salt to taste. Mash with a fork and stir to combine. Taste, and add more salt, lime or oil if necessary. Garnish with peanuts, if using.

Olivier Salad
Since I am Russian it's only normal to add this really good salad to this site. I've had this salad so many times and it's always really good. This is basically a Russian take on potato salad. I don't really have much to say other than to try it. This is a really big recipe so feel free to make it smaller by using less amounts of ingredients. Editor, any tips? (Lauren [Editor] says: You could use edamame instead of peas if you're not a big pea fan. :D )

Ingredients: 8-10 medium sized potatoes (cooked); 4-5 eggs (boiled); 1 fresh English cucumber (or 4 persian cucumbers); 8-10 medium sized dill pickles; 1 can of corn; 1 can of peas; what's a Russian recipe without dill, so just grab a bunch; 3 tbsp of mayo; 3 tbsp of sour cream; pepper and salt to taste; opt. meat
Tools: Knife or dicer and a large bowl
Making it:

- Cook the potatoes and boil the eggs
- Let cool and peel
- Dice everything (potatoes, eggs, pickles,cucumbers) into small small bits and throw that in a large bowl
- Add corn and peas (do not include the liquids)
- Finely chop dill and toss that in there too
- (Opt. Step) dice up the meat and put in bowl
- Add the mayo and sour cream and mix everything thoroughly
- Add pepper and salt to taste
